On my journey to Weight Loss San DiegoI have been trying to find new healthy meal options and ways to jazz up some old recipes.  I love to eat salads but have a really bad habit of making the same old boring salad.  Recently I started using more barley in my cooking and found a wonderful new way to incorporate barley into my salads.  There are so many wonderful health benefits of barley.  Not only is it high in fiber but it helps to strengthen your immune system, keep cholesterol levels low, prevents cancer and heart problems, preserves skins elasticity and can help to reduce risk of osteoporosis. 

Here is my favorite salad recipe that includes barley.  You will need; ½ cup-1 cup of quick cooking barley, 1 head of romaine lettuce, ¼ red onion chopped, ¼ cucumber chopped, 1 can of lentils, ¼ cup chopped pitted kalamata olives, 2 tablespoons of fresh lemon juice, pinch of salt and pepper, 2 ounces of goat cheese, 3 tablespoons of olive oil.  Mix lemon juice, olive oil, salt and pepper together for dressing.  After cooking and straining the barley add it in a medium bowl with lettuce, lentils, onions, olives, cucumbers and toss in the dressing.  Top it with goat cheese and serve!
